I recently spent a weekend in Vermont with some friends. My fiancé and I were the cooks for the entire weekend, so we made up a menu to accommodate all food allergies and stuck to gluten free paleo recipes.
Though exhausted from the early breakfast preparations, I was also very content staying in and prepping a warm and inviting meal when all returned from skiing.

There’s nothing like a good dinner with great friends!
I am not a good skier despite the fact that I lived in Colorado for a few years! But truth be told, I am not a cold weather gal. So I stayed behind, hung out in the outdoor hot tub, napped, and read. All while feeling quite luxurious in a gorgeous log cabin with views of the mountains.
And because breakfast is my favorite comfort meal, here are some easy breakfast recipes you can experiment with this weekend:
Sweet and Spicy Sausage
5 Sweet Sausage Links
5 Italian (Hot) Sausage Links
4 Tabs of Grass Fed Organic Butter
1/4 Cup of 100% Natural Organic Maple Syrup
Salt and Pepper
Preparation:
Heat frying pan on medium heat and melt butter. Remove casing from sausage and form small bite size pieces of meat. Place sausage pieces into heated pan. Allowing the sausages to brown and cook thoroughly. Once cooked add maple syrup to the pan and continue to cook for 5 minutes making sure to properly coat all sausage pieces.
Season with salt and pepper. Once fully coated remove the sausages from pan and plate. You can have this as a side with pancakes, eggs or as an appetizer to any meal.
Gluten Free Pancakes
Made by Pamela’s Gluten Free Pancake Mix
Substituted with almond milk and added chocolate chips
Sweet Potato Hash

Sweet and spicy sausage, gluten-free pancakes, and sweet potato hash. All paleo, all gluten-free.
3 sweet potatoes diced
1/2 onion diced
2 cups of chopped kale
1cup chopped bacon
2 tbsp coconut or olive oil
Salt and pepper
Preparation
Saute onions with olive oil or coconut oil until onions are soft and golden. Add sweet potatoes and cook for 20 – 25 minutes until cooked thoroughly. Cook bacon separately, then drain fat and add to sweet potato mixture along with the kale and stir to fuse all the flavors together. Season to taste.

Gluten free bagels by Against the Grain, sliced avocado, vegan cream cheese, and organic grass fed butter.
We also created a delicious goat cheese and ham quiche that we adopted after our trip to Paris. Sadly, we couldn’t take pictures fast enough before it vanished!
